Frozen Berry Mocktails

Kick off summer with a patriotic red, white and blue mocktail! With no alcohol and low added sugar, even the kids can enjoy these frozen fruity treats.

Strawberry Layer


Ingredients

  • 1 Tbsp honey
  • 2 cups frozen strawberries
  • 1 Tbsp lemon fresh juice
  • 1/2 cup ice cubes

Preparation

  1. Make the strawberry layer: In a blender, combine all the strawberry layer ingredients and blend just until smooth. Pour into a freezer-proof container and freeze while preparing the other layers, for at least 1/2 hour.

Coconut Layer


Ingredients

  • 1/4 cup cold coconut cream
  • 1 banana, sliced and frozen
  • 1/2 cup frozen pineapple chunks
  • 1/2 cup ice cubes

Preparation

  1. Make the coconut layer: Rinse out the blender. Add all the coconut layer ingredients and blend just until smooth. Pour into a freezer-proof container and freeze while preparing the other layers, for at least 1/2 hour.

Blueberry Layer


Ingredients

  • 1 Tbsp honey
  • 1 1/2 cups frozen blueberries
  • 1/2 ice cube

Preparation

  1. Make the blueberry layer: Rinse out the blender. Add all the blueberry layer ingredients and blend just until smooth. Pour into a freezer-proof container and freeze for at least 1/2 hour.
  2. Prepare the mocktails: In 4 glasses, evenly divide the strawberry layer, the coconut layer and the blueberry layer. Serve frozen.
